Who doesn’t love pizza?  I’m not sure I’ve ever met someone who doesn’t like the cheesy goodness a good pie delivers.  While I do love pizza, I’ve never been fond of the greasiness it is usually lathered in or the big belly feeling I get after eating a traditional take-out pizza form a chain restaurant (can you say carb coma?).  How do I get around the ugliness without skimping on taste?  Make it at home with all my favorite ingredients!

Ingredients for 1 veggie pizza & 1 ham & pineapple pizza:

  • 2 whole wheat ultra thin and crispy pizza crusts (I used HEB brand)
  • ~1 C pizza sauce with no added sugar – I used about 3/4 jar Catelli brand, tomato & basil flavor – divided use
  • 1 small zucchini cut into thin rounds
  • Few thin slices yellow onion (to taste)
  • 2 handfuls fresh spinach
  • 4-5 large, thick slices tomato
  • 1/2 tbsp olive oil
  • 1-2 thick slices ham, diced (we only used 1 large slice)
  • 1/2 can pineapple tidbits in natural juices, drained
  • 1 C 2% mozzarella cheese, grated – divided use


  • In a large skillet, heat olive oil
  • Add zucchini, spinach, and onion to hot skillet and sauté until soft
  • Place pizza crusts on pizza stone or baking pan and top each with 1/2 cup sauce
  • Add sautéed veggies to 1 crust, top with fresh tomatoes, top all with 1/2 cup cheese
  • Top the other crust with ham, pineapple and 1/2 cup cheese
  • Bake according to crust directions and at least until cheese is hot and bubbly
  • Cut each pizza into 4 slices
